1.What is yatsuhashi?
Do you know Yatsuhashi?
This is one of the most famous and traditional Kyoto sweets made with cinnamon.
Roasted yatsuhashi is hard.
Unbaked yatsuhashi is soft.
Fresh yatsuhashi has sweet bean paste inside the soft dough.
Main ingredients of yatsuhashi are rice flour, sugar and cinnamon, so it's a gluten-free dessert. (some company's yatsuhashi contains a flour so please check or ask staffs before you buy.)
Around the Kyoto station, you can see a lot of yatsuhashi in the souvenir shop.
2.The history of Yatsuhashi
In 1689, roasted yatsuhashi came out.
In 1889, it received a silver award in the Paris Expo and it got the limelight.
In the 1960s, unbaked yatsuhashi and bean jam inside the soft dough were born.
At that time, it had only cinnamon and matcha flavor for 20 years.
From the 1990s, not only these two flavors, a lot of other flavors of yatsuhashi were launched, like strawberries, sweet potatoes, black sesames and so on!

From now on, I want you to recomend one of my favorite Yatsuhashi's shop
called "nikiniki".
This shop opened in 2011 produced by shogoin yatsuhashi.
These yatsuhashi are Halloween designs in October.
Every months, these designs are changed depends on season. Don't you think it is lovely?
